While we are all quarantined, this is a perfect opportunity to work on our cookings skills! The first recipe I suggest you try is shrimp scampi; a super flavorful & easy dish to make that can be on the table in 10 minutes.
Ingredients:
1 1/4 ib. peeled and deveined shrimp 🦐
2 tablespoons olive oil
4 tablespoons butter
4-5 cloves garlic, minced (or 1 1/2 tablespoons minced garlic)
Salt and fresh ground black pepper
1/4 cup dry white wine
1/2 lemon 🍋 juice (2 tablespoons) and zest
1/4 cup fresh parsley, chopped
1/2 teaspoon crushed red pepper flakes
Instructions:
In a large skillet heat olive oil and 2 tablespoons butter over medium low heat.
Add garlic and saute for about 30 seconds to 1 minute, until fragrant. If you're feeling fancy, slice 2 of the cloves and toast in separate pan.
Add shrimp and season with salt and pepper to taste. Saute for 1-2 minutes then flip and cook other side of shrimp for 1-2 minutes until pink.
Pour in white wine and add red pepper flakes. Lower heat and simmer until wine is reduced by half (1-2 minutes). Your shrimp should be cooked through but do not overcook them (the meat will turn tough).
Stir in remaining butter, lemon juice, and parsley then take off heat immediately.
Garnish with lemon zest, parsley, and toasted sliced garlic (if you chose to slice & toast some garlic in step 2).
Serve with linguine pasta or crusty bread 🥖 .
