This coleslaw is creamy, delicious, and so easy to make. Be sure to check out my fall off the bone BBQ rib recipe to pair it with, you will not regret it! It only calls for a few ingredients that you probably already have on hand.
Ingredients:
1 medium head of cabbage (about 2 pounds) with the leaves removed
1/4 cup red onion, chopped
3/4 cup mayonnaise
2 tablespoons chipotle mayonnaise
salt & pepper to taste
2 tablespoons apple cider vinegar
3 medium carrots, peeled and shredded
1 tablespoon white sugar
1/4 cup parsley, chopped
2 tablespoons dijon mustard
Instructions:
Chop your cabbage into thin slices. Place cabbage, carrot, and onion into a large bowl.
In another bowl mix mayo, apple cider vinegar, mustard, sugar, sugar, and seasoning together.
Slowly pour the sauce into the vegetables and adjust how much or little you would like depending on how you prefer your coleslaw. Enjoy!
Chef's Notes:
You can find the Boar's Head chipotle mayonnaise in most stores or simply add a little adobe chipotle pepper for that smoky flavor.
I suggest mixing cabbage head colors.
