Meatball Recipe

Meatballs are a great option for a make-ahead meal because they freeze so well. They take a little time to make initially, but your future self will be thanking you for the convenience of having them on hand. This recipe makes flavorful, moist, and delicious meatballs that only take a few minutes to bake in the oven or fry in a pan. Pair with spaghetti and you can recreate the scene from Lady and the Tramp for this Valentine's day.


Ingredients:

  • 1 ib ground beef (85% lean)

  • 1 ib ground pork

  • 1/4 cup fresh chopped parsley and/or basil

  • 1 cup bread crumbs (pank0) or dry bread

  • 3/4 cup milk

  • 1 teaspoon garlic salt

  • Salt & fresh cracked black pepper to taste

  • 2 eggs, lightly whisked

  • 4 garlic cloves, grated

  • 1/2 cup yellow onion, grated

  • 1 cup fresh parmesan cheese

  • 2 tbsp dried or fresh chopped oregano

  • 1/4 tsp crushed red pepper flakes

Instructions:

  1. Preheat oven to 425º Fahrenheit. In a medium bowl combine the breadcrumbs and milk then mix well.

  2. While the breadcrumbs soak, combine the remaining ingredients in a large bowl. Incorporate well then gently roll 1-2 tbsp of meat into a ball by using circular motions with the palm of your hands. If the meat is not binding together well, it may be too warm, try chilling in the fridge for an hour then form balls.

  3. Line two cookie sheets with aluminum foil and spray a little vegetable oil. Arrange the meatballs on the foil and bake for 12-15 minutes. Serve immediately and enjoy!
