I am not a fan of asparagus or vegetables in general and I doubt that I am the only one who shares this sentiment. But it is hard to dismiss the health benefits of eating your greens, so any recipe that makes them tasty is worth a try, in my opinion. This Asparagus recipe is so simple and ready in only 5 minutes. It makes for a great side dish to create a well balanced meal. Feel free to experiment and modify the seasonings; to see what you like. Ingredients:
1 bunch asparagus
1 cup chicken broth
1 teaspoon white pepper
Salt to taste
A squeeze of fresh lemon juice
Instructions:
Heat chicken broth over medium heat in a skillet.
Wash and chop your asparagus then cut into thirds (or however long you would like). I normally do not to include the bottom three inches because this part is hard to chew and bitter.
Place the chopped asparagus into the chicken broth. Add the white pepper and salt. Let simmer with a cover for 4-5 minutes or until the asparagus is easy to chew but still retains a "bite" (in the texture).
Once the asparagus are cooked, plate and top with a squeeze of fresh lemon juice. Serve and enjoy!
